Real talk: yes, Hope and I strive to maintain healthy lifestyles and we also drink alcoholic beverages. AND THAT’S OKAY. That said, we try to keep our drinks on the healthier side, which also just happens to be our personal taste preferences. Hope is a vodka soda gal, while I’m a G+T fan—and we’ll both thoroughly enjoy a glass (or four) of cabernet sauvignon and champagne at brunch, of course. Spiked seltzers are fairly new to the scene and another great way to engage in drinking activities without loading on extra calories and sugar. Yay!
Now that we’ve thoroughly covered our alcohol views and preferences, let’s talk about this mint matcha cocktail. If you’re wondering what matcha is, check out our WTF post about it. If you’re an avid PFF reader (we love you!), you probably already know how much we love matcha, based on our matcha latte and matcha pancake recipes. Now that warmer weather has finally graced us with it’s presence, we decided it was necessary to create a matcha cocktail. We love Matchabar matcha drinks—specifically their mint matcha—which we frequently purchase at Snap Kitchen. This cocktail combines mint matcha, vodka or gin, seltzer, and fresh cucumber and mint, making for the most refreshing, guilt-free summer cocktail yet. You’re welcome!

Mint Matcha Cocktails
Ingredients:
- 2 oz Matchabar Mint Matcha
- 1 oz vodka or gin
- 2 oz seltzer of choice; we used Spindrift cucumber sparkling water, found here.
- sliced cucumber and fresh mint leaves, optional garnish
Instructions:
- Place ice and garnishes in a glass.
- Combine 2 oz Matchabar Mint Matcha and 1 oz vodka or gin and pour over ice.
- Top with 2 oz seltzer, or as much as desired.
Yield: 1 serving
Serving size: 1 5 oz cocktail
