If you ask us, hacking up our fave veggies, giving ’em a lil’ dredge, and throwing them in the air fryer makes for the perfect snack, dinner side, or easy party app! As opposed to the skepticism we faced when trying out avo fries (spoiler alert: success!), we had no doubts about zucchini’s fruitful future in the air fryer.
What makes these wedges even more delicious is the horseradish dipping sauce! This sauce is so interesting on the taste buds because it packs the cooling effect of the Greek yogurt plus the heat of the horseradish. You’ll have a little extra dipping sauce when your zucchini wedges have been devoured…what will you use it on!? Yummm.
Air Fryer Zucchini Wedges with Horseradish Dipping Sauce
Ingredients:
- 1 medium zucchini, cut into wedges
- 1/2 cup whole wheat seasoned breadcrumbs
- 2 tbsp grated Parmesan cheese, optional
- 1 large egg, beaten
- salt and pepper, to taste
- olive oil spray
For the dipping sauce:
- 1/2 cup plain nonfat Greek yogurt
- 1 tbsp prepared horseradish
- juice of 1/2 lemon
- salt and pepper, to taste
Instructions:
- Preheat air fryer to 400°F.
- Place dipping sauce ingredients into a small bowl and mix until thoroughly combined. Set aside.
- Set up your dredging station by combining the breadcrumbs and cheese in a small bowl.
- Scramble egg in another small bowl.
- One at a time, dip zucchini wedges in egg, followed by breadcrumb mixture. Repeat this until all zucchini wedges are coated.
- Place half of the wedges in the basket of your air fryer and lightly spray with cooking spray. Cook for 8 minutes, flipping halfway through. Repeat this step with the remaining wedges.
